I am out of country currently, and I called and set up a new SIM card the other day, I was told I would receive an email with 24 hours and I’ve received nothing. This was around 5 days ago.
I’ve tried calling multiple times but I’m having no luck, some help would be great.

Checked if the E-Mail did not go to Spam? Don't have access via myMEO?
In any case, even if you had received or had access to the SIM card, it is impossible to activate it outside of Portugal. You will only be able to activate the SIM card when you arrive in Portugal.
